Light and fresh combination of sweet, juicy pinapple, cilantro, and black beans in a delicious twist on traditional enchiladas.  I used fresh, homemade, whole grain gluten free tortillas in this recipe and it really gave it that extra something special!  You can certainly use your favorite tortilla whether whole wheat, corn or gluten free.

The inspiration for this recipe came from a recipe book my mom let me borrow.  It certainly is NOT a vegan recipe book but with my creative genius I have been able to convert the recipes into healthy, delicious vegan versions my family has LOVED!

Obviously this enchilada didn't take a lot of converting but I took quite a few liberties with this one to add more flavor.  Most non-vegan recipes do not rely on complex flavors, rather they rely on being smothered in greasy cheese.   You will notice that my famous cheese sauce is featured in this recipe but it is FAR from being greasy, it is based on a healthy combination of vegetables.

These enchiladas are PACKED with nutrient rich vegetables and black beans.  This is a nourishing meal that will delight your taste buds, not a nutrient poor meal that will leave you feeling heavy and your body lacking.

I know I promised this recipe yesterday, sometimes it is hard when I commit myself to a certain day.....

It isn't that they don't love the food.....my daughter always says to me...............

"I LOVE having a mom that is a famous chef!"

Okay, I know I am not famous by any means, but she thinks I am.  I asked her why and she said because then I get to eat amazing food all the time!  I'm really glad my kids enjoy the food I prepare.  That is what brings me so much joy in my life, I love creating HEALTHY recipes to share and to know that others enjoy them so much.  Kids can be hard to please and mine are no different.  My daughter would just as soon eat ice cream for breakfast, donuts and oreos for lunch and chocolate chip cookies for dinner.  Trust me she is picky, but she loves the healthy food I make and that says a lot.

Anyway, why do my kids get frustrated with my recipe creating?


Because I write all over their school notebooks or any paper I can find!!

My daughter was hollering at me yesterday for writing in her math notebook and it wasn't the first time.  When I get inspiration for a recipe anything that can be written on is fair game!  Sometimes it is just thoughts of ingredients that would be delicious combined and so I will write down the recipe name idea and a list of ingredients and unfortunately I often lose the paper and forget what I wanted to create.....that is the worst!

I promised the Enchilada recipe would be posted yesterday!

Okay, the next hazard of being me is promising recipes and then not being able to post them when I say.  I really am reliable I promise!   I generally like things to be neat and tidy and I am always on time when I have an appointment or I am meeting someone, so WHY can't I do the same with recipes?

Like I said, with that creative brain there is NO planning when inspiration comes, it just comes!  So you grab a paper, a book, an envelope or whatever and you start writing.  The problem comes when you LOSE what you were writing on!!!!

You guessed it, I LOST the recipe for the black bean and pineapple enchiladas!

I swear if I had all those lost recipes and could make a dime off of each of them I would be a rich woman :-)  

Anyway, luckily after a lot of searching....thumbing through ALL my notebooks, flipping over papers, and opened envelopes etc....  I found the recipe on a shelf below my desk waiting to be typed out....ugh.  If only you could organize creativity!

So the much awaited recipe has been found and I am posting it now so that there is no risk of it ending up lost in my pile of creative mess!

We have moved so many times over the years, this is the picture of our truck before our 1 month cross country trip.   This may not be the picture of this past move two weeks ago but it is always the same, frantically trying to find your belongings in mountains of boxes.  You can see that even on my cross country trip I took my Blentec blender with me!

I have been creating recipes like crazy, of course my kitchen was the first thing unpacked and ready to go even though there are still a few things I can't find that are probably hiding in some random box, packed last minute, that is still sitting in the garage.

I wanted to post sooner but alas, my camera battery died and low and behold I could not find the charger.  Some recipes did not get photographed and so I just decided to pick up where I am and carry on.  Needless to say, I DID find my charger so it's all good now.  I will post those recipes another time, or save them for an e-book someday.

I think I am all set and ready to go as far as my blog is concerned, the kitchen is functional, I have my camera, and computer is all set up as well so I'm good to go!


One of my greatest joys is to create recipes and prepare food for those I love and watch them enjoy what I have created for them.

I also enjoy sharing my recipes with readers and I LOVE to hear feedback from those who have tried recipes and have enjoyed them.  It has been such a joy to be able to do that.   I keep going back and forth about how I want to go forward with my blog.

There are days I feel a lot of stress trying to create recipes fast enough to keep up on the blog.  There are times I am FILLED with recipe ideas and I end up spending all day creating them which ends up leading to me overeating because I am tasting all the yummy food.  

Sometimes all the obsession with creating delicious recipes to share ignites my past emotional eating issues and 5 pounds will show up out of nowhere.  It seems to be this battle between doing what I love, sharing it with others [which I also love] and loving myself.  

I am not a salesperson nor a business person or some savvy internet marketer- I just do what I love and that is helping others with health challenges and supporting them by sharing my recipes.   

Many of the recipes I share are foods I don't really eat all that often, especially the gourmet desserts.  I'd really rather share real life healthy eating than try to keep up the gourmet stuff.

Minestrone soup seems to be such a simple classic, but honestly this soup was out of this world delicious and packed to the brim with vegetables!  My family really enjoyed this with some fresh homemade gluten free bread.

Gluten free bagels with a chewy inside and a lightly crispy crust.  I tested a couple of bagel techniques and this one turned out perfectly.  My son who is not gluten free kept begging for more bagels, my husband who is a bagel afficionado really enjoyed these bagels as well.  I was so happy to see that my whole family whether gluten free or not could enjoy a gluten free yeasted bread.  Normally the gluten free breads are exclusively eaten by the GF members of the family because they aren't very good.  

My goal in creating these recipes is to make gluten free delicious for everyone!  Celiacs and others who must eat gluten free should NOT have to sacrifice taste or texture.  I wanted to keep you updated on all the recipes that are being created for the Gluten Free Breads E-book coming up at the end of the month.

Rosemary Butternut Cream Sauce over Pasta


If you are in need of a FAST, easy dinner, this is perfect.  You do have to bake a butternut squash but honestly, I pop it in the oven an hour before I need to make dinner and forget about it.  It is so easy, you don't really have to 'do' anything.  If you forget to do that you certainly could use canned squash if needed, or you can bake squash and freeze it to make it easier to use when needed.

The Ultimate Bread Lovers Gluten Free Bread Recipe

Celiac Bread Lovers Dream Come True......

Imagine pulling out a warm gluten free bread from the oven, cutting a slice without a single crumble and sinking your teeth into a soft, moist, spongy bread reminiscent of that old familiar home-baked wheat bread your mom used to make.

Boy am I glad I followed that inspiration because what followed was nothing short of a miracle, at least in my  world it was.  I'm sure any celiac would agree, being able to eat delicious bread and even be able to make a sandwich without bread falling apart or being so stiff who would want to eat it  anyway,  is a miracle.

A chocolate lovers delight, rich creamy chocolate silk filling topped with a light yet rich vanilla cream.  This is every bit as decadent and creamy as its full fat counterpart, but without the refined, nutrient deficient oils.

Most raw food/vegan pies include copious amounts of coconut oil.  There are articles all over the internet touting the benefits of coconut oil, but are these claims really true?

NO! Coconut oil is empty calorie and includes only minute amounts of ONE essential nutrient!

Lets compare coconut oil to WHITE unenriched flour

I would NOT call this a health food by any stretch of the imagination, however, I would not call it empty calories either.

Yes, white flour contains protein, fiber, fat, vitamins and minerals so it is in fact, not empty calories.  Let's move on to coconut oil......

All oil is REMOVED from the whole food that contains it, and is therefore refined in some way or another.  Anything that is extracted or removed from its whole food source is NOT a whole food. 

Whole foods should contain a balance of carbohydrates, protein, fat, fiber, vitamins, minerals etc....

To Clarify:  When I say refined I don't mean refined oil verses unrefined, I mean any oil that has been extracted from its whole food.

Coconut oil provides absolutely ZERO vitamins or minerals! The ONLY essential nutrient in 234 calories is a measly 4% of your daily value of Omega 6's!!!

You want to talk about EMPTY calories....coconut oil is the poster child of empty calories, not white flour!!!

Okay, so what about its supposed Thyroid boosting properties?

So, if the fact that this oil contains virtually NO nutritional value doesn't prove that it is not health food.   Coconut oil consumption is not going to replace the need for thyroid medication in individuals who are on any form of thyroid medication!  In fact, it isn't going to reduce your need for thyroid medication either.  NO studies have ever been conducted on HUMANS showing that coconut oil has any significant benefit on the thyroid or is able to reduce the need for thyroid medication.

According to the Mayo Clinic, there is no evidence to support claims that coconut oil has any benefit to the thyroid gland.  http://www.mayoclinic.com/health/coconut-oil-thyroid/AN01367


What about it's Medium Chain Fatty Acids?

Are medium chain fatty acids essential nutrients??  NO!

Then my answer is SO WHAT!  Medium chain fatty acids are more easily broken down for energy than longer chain, this really doesn't mean a whole lot given that the human body is designed to utilize CARBOHYDRATES for energy first and foremost!  

We absolutely DO NOT need medium chain fatty acids, they are not an essential nutrient and therefore it doesn't really matter whether they are utilized for energy more readily than some other form of fat.

What about coconut oil boosting metabolism?

We need to use a little bit of common sense and understand that we cannot just eat as much of any food that we want and throw caution to the wind as to how many calories it contains.  Okay, so if your body defies the laws of thermodynamics then by ALL means eat all the coconut oil you want!

The rats on the" MCT fatty acids gained 15% less weight than those on long-chain fatty acids."   J Environ Pathol Toxicol Oncol. 1986 Mar-Apr;6(3-4):115-21.

I find it interesting that in the studies on coconut oil, there are some very minor differences in MCT compared to LCT and we determine that this means we should consume MCT to lose weight.  We really need to ensure we are consuming essential nutrients and consuming a healthy diet, adding in MCT to our diet isn't necessary.

I found a study on humans and medium chain fatty acid consumption and it did not show significant results as far as weight loss is concerned.  The researchers concluded that "excess energy derived from MCT is stored with a lesser efficiency than is excess energy derived from dietary LCT."

The results of the studies on coconut oil and weight loss are summed up well by a registered Dietician for the Mayo Clinic:

"doesn't lead to significant weight loss or improved body mass index (BMI)."

It is true that medium chain fatty acids are less likely to be stored as fat than long chain fatty acids, however, medium chain fatty acids are only a small part of the fatty acid profile of coconut oil and are not going to provide any health benefits or any nutritional value to your diet.  


What does this mean, the TINY rise in metabolism that MAY happen will not compensate for its high calorie content.  Can you maintain a normal weight and eat coconut oil, yes, you can but it is much MORE difficult than if you did not eat it.

1 c. cooked oamteal.....150 calories
1 med. baked potato....160 calories
1 c. brown rice...........209 
2 c. kale....................67


2 Tb. of coconut oil is not even remotely going to fill the stomach enough to trigger the stretch receptors in the stomach to signal satiety.  1 baked potato or 1 c. oatmeal is FAR more likely to signal satiety than a tiny amount of coconut oil.  

Coconut oil is empty highly concentrated calories and provides no real benefit at all!



 The fact that pacific islanders consume it and they 'presumably' have lower heart disease than Americans is in no way a reason to consume coconut oil.  There are many factors at play in heart disease and simply because heart disease may be lower does not mean it is because they consumed coconut oil, in all reality it could be in spite of their coconut oil consumption.


A study showing coconut oil impairs blood flow and reduced the anti-inflammatory effects of HDL.

A study in 2006, looked at the effects of a single high fat meal on HDL, inflammation and blood flow.  This single high fat meal derived its fat from coconut oil.  The effects of coconut oil on the body from this high fat meal were evaluated at 3 hours postprandial and 6 hours postprandial.  

3 hours after the high coconut oil consumption the anti-inflammatory effects of HDL was significantly impaired, at 6 hours it was still signficantly impaired.    Blood flow was also significantly impaired 3 hours after the coconut oil meal and still remained slightly reduced at 6 hours after the coconut oil meal.

Consumption of Saturated Fat Impairs the Anti-Inflammatory Properties of High-Density Lipoproteins and Endothelial Function J Am Coll Cardiol, 2006; 48:715-720.


  


Am I saying you should never use coconut oil?

No, if you have been following my blog you will see that I have used coconut oil in a few of my recipes in the past.  I am NOT completely against coconut oil, what I am against is a certain foods' benefits being exaggerated and fabricated to sell a product.  

I don't think isolated oils in any form should be used on a daily basis as they add a lot of calories without any nutritional benefit.  I believe fats should be consumed in whole foods.

1 c. raspberries contain 16% of your daily value of omega 3's!

ALL whole foods contain essential fats and that is where I believe we need to get the majority of our fats from.

If you want to use a little coconut oil in a dessert and it is less than 1 1/2 tsp. per serving on occasion I think that is fine.  But having a dessert that contains 500 calories of just coconut oil per serving is NOT healthy on a regular basis for anyone.


I wanted to create a dessert that did not rely on coconut oil but still had a nice, rich, creamy taste in a raw dessert.  I think this beautiful chocolate silk pie is an amazing example of how you CAN make delicious desserts without the use of refined, nutrient poor oils.

I wouldn't call this a nutrient rich dessert but it is certainly  much healthier than traditional or even most vegan or raw desserts.  Enjoy!!

Homemade, creamy nacho cheese with a little spicy kick smothers smoked tempeh and potatoes.  Don't be fooled by its gourmet sounding title, this cheesy creation is the perfect quick, simple meal.

It has been a hectic week, we've been looking at moving for about a year.  The home I am in right now has a lot of little quirks that are getting difficult for me.  For instance, the cupboards are 10 feet high and therefore most of the cupboard space is unusable for my 4 foot 11 inch self!  Even with a BIG step stool I cannot reach them.  

My kids would always giggle, Mom is climbing on the counters!

It is true, I had to climb on the counters in order to reach food in the cupboards and you know I really don't want to have so much unusable space, and I don't want to climb on counters, as I would normally tell my kids not to.

The kitchen is tiny, no counter space, so I end up doing all my prep on the kitchen table.  It just isn't practical for me.  I won't bore you with all the boring details but without a disposal and other issues I have been ready to move for a long time, the only reason we stayed so long is because we LOVE the people here!  Finding a wonderful place to live where people wave to you when you drive by whether they know you or not is darn near impossible in our egocentric, disconnected world!

So, we found a wonderful home but it was so popular there were three applications that came in at the same time, literally people were sending applications within minutes of seeing the house.  We had to just send it and now I find myself frantically cleaning and boxing because we have to be out by Aug. 31st!!!  YIKES!

I am doing this all alone and it is a HUGE job for one person to box up and clean a whole house!  Sorry for the lack of posts and recipes lately but I just haven't had much time.  

I made this recipe last night just on a whim  because I couldn't think of anything else to make and it turned out really good and my family enjoyed it so I thought I'd share this with  you.

Don't be surprised if I end up posting recipes for my veggie juices, smoothies and other simple recipes because that is what I'm going to be living on for the next couple of weeks.
