We just moved across the country for the second time in one year and I have had a difficult time keeping up with the Peaceful Kitchen Blog. We also just opened a new health and fitness center so things have been very busy, but now that things have settled down I plan to keep up on the blog for all my customers and fans of The Peaceful Kitchen.


A lot of delicious food has been created over the past couple of months and I want to show you what you can expect in the upcoming recipe collections.



Chocolate Chip Cookie Bars





I have been mastering oil free baking over the last 6 months. It has taken awhile to mimic the crispy exterior and chewy interior of fatty baked goods without any oil. I have finally figured out how to do it and the result has been amazing.

I have had numerous requests for my cookies and the recipes for them. You will be thrilled with these new recipes and healthier as well.

Vegan Chicken Fried Steak



A couple of months ago, a family party was being held at my home and I was asked to cook the meal for everyone. The only vegans attending would be my immediate family.

I tried to come up with a meal that everyone would enjoy. We do not really eat meat substitutes but I knew that non-vegans would prefer to have a familiar food.

I do not have many recipes for meat substitutes so I decided to create my brothers favorite meal, chicken fried steak. It was quite a process, it is not an easy recipe but the result was fabulous!!!


Everyone raved over the dinner, my father even said if he had the money he would pay for me to open a restaurant! That is high praise coming from him.  Recipe will be in the upcoming recipe book!

Chocolate Waffles with Bananas and Chocolate Sauce


Fathers Day Special



I don't recommend eating this for breakfast. In fact it is a far cry from the fruit or green smoothies that I have every morning. But for my chocolate loving husband I thought this would be the perfect 'breakfast in bed' food for fathers day.
These waffles were very moist and soft with a hint of chocolate flavor. My husband loved them, the kids loved them as well. This was one day in the year where they got dessert for breakfast.

Father's Day Special Chocolate Waffles
I created this recipe for my chocolate loving husband on Father's Day.   The kids LOVED the waffles and my husband enjoyed them as well, although they really are more of a dessert than a breakfast.  Enjoy!

 

Serving options: 
1/2 c. cocoa with 1/2  c. maple syrup combine and whisk until chocolate sauce is smooth.  Pour over waffles. 
Sliced banana
Sliced strawberries
Peanut butter
raspberries

Raw Key Lime Pie






This recipe was created on request from a fan of The Peaceful Kitchen and a past student of mine. The color was a very light green which could easily be remedied with a touch of vitamineral green or Boku. This not my typical low fat, oil free type recipe but it was decadent and rich.

This is a great recipe that is more in line with my culinary training. I'm sure the raw fooders in my fan base will really enjoy this delicious recipe. The crust is very reminiscent of a typical pastry crust. Enjoy!!

Mexican Salad created after my favorite Mexican fast food restaurant

I created some exciting recipes for my birthday dinner in April. Since January I had been craving my favorite dessert from my unhealthy college days "Burnt Almond Fudge Pie with Caramel topping."

I planned the menu for my birthday dinner and it was a big hit! My sister took the photos of the food for me so I could share them with you.

The Mexican Salad contains:

Creamy Cilantro Dressing

Sweet Pulled Seitan

Black Beans w/ sauteed garlic, onion and spices

Mexican Rice
topped with tofu sour cream, guacamole and salsa!

Burnt Almond Fudge Ice Cream Pie topped with Soywhip and Carmel Sauce




I could not have hoped for a more decadent, delicious replica of my favorite dessert. This was pure HEAVEN!!! It is exactly as I remember.....only dairy free.

You can certainly make this soy free by using almond milk, be careful what milk you choose to use or it will not be creamy enough.  Do not use rice milk, flax milk, oat milk or any other light milk.  Hemp milk will work as well as almond milk.

I must note that the soywhip was melting because we had just topped it with hot carmel but I think you can see how absolutely fabulous this pie was!!
This ice cream recipe is so amazing it is actually firm like you find in grocery store ice cream. It is rich, chocolatey and as creamy as ice cream can possibly be!! You do not want to miss this recipe. This ice cream can be made into your favorite flavor. Strawberry, Peach, Vanilla, Butter Pecan, you name it.

Spring Creations

Spring Creations at The Peaceful Kitchen






Paradise Cake


I created this recipe for a family party and it was a HIT, everyone LOVED IT! My mother decided it needed to be called Paradise Cake.....

This luscious cake was made with homemade coconut pudding that was then added to a beautiful vanilla cake recipe. The Whip Topping has homemade cream cheese, Soy whip and pinapple. It was absolutely delicious! This recipe will be added to the website the end of May.



Chocolate Streusel Cake



This decadent cake is a light, moist cake with chocolate and turbinado crumble swirled throughout with a thick cinnamon crumb on top.




It was a hit at our Girl's Night Out party a few weeks ago. The cake is very moist and the subtle chocolate flavor adds a fun twist to crumb cake that chocolate lovers enjoy.

Apricot Tempeh Coleslaw






This is a fun, spring recipe with a delicious twist on an old favorite....apricot preserves.


It has sauteed tempeh, purple grapes and cabbage in a non-dairy mayonaise with apricot dressing.

Take this to your next BBQ, it is sure to be a crowd pleaser!



Creamy Tempeh Salad



This is a fun salad recipe, it can be used to make Tempeh salad sandwiches or it can just be eaten on a bed of romaine lettuce. This salad has sauteed tempeh, cucumber, tomato halves and is smothered in a delicious non-dairy mayonaise sauce.

BBQ and Gourmet Italian

Delicious Vegan BBQ on the Campfire!







This was a simple yet delicious vegan BBQ. I prepared a homemade Miso BBQ sauce, marinated the tofu and veggies and then we roasted them over the campfire.

I didn't take the time to make a potato salad so we had a fruit salad with poppy seed dressing, corn roasted over the fire and watermelon.

Delicious Roasted Veggie Kabobs



BBQ Sauce
1/4 c. light yellow miso
1/2 c. apple cider vinegar
1 c. tomato sauce
1 clove roasted garlic minced
1/2 Tb. vegan worcestershire sauce
1/8 tsp. red pepper sauce
1/4 tsp. hickory liquid smoke
1 tsp. garlic powder
1 tsp. onion powder
1/2 Tb. stoneground mustard
1/2 c. succanut
1 Tb. maple syrup
1 Tb. olive oil
Combine all ingredients in a large bowl, whisk together.
**this can be used to flavor veggie burgers, marinate veggies and tofu for kabobs etc...



I marinated extra firm tofu [remember to press the tofu in towels to remove all water or it will fall apart and not soak up the flavor], pineapple, onion and yellow bell peppers. You could use mushrooms, red bell peppers, broccoli, cauliflower, zucchini, yellow squash or any variation of veggies.


Blueberry Crisp



This recipe was quite the hit. I could have done this in a dutch oven but we prepared it in the oven while we ate the rest of our BBQ feast.




This is SO simple to prepare and it tastes amazing! It is like a split between a blueberry cobbler and a blueberry crisp.




I prepared the crust without the use of refined oils and used a combination of almond butter and cashew butter to give it a rich, full flavor!




Strawberry Banana Ice Cream



This is the most delectable strawberry ice cream and the best part, IT'S FAT FREE and low in calories, with no added sugar! YUM!!! It is a simple combination of frozen banana, strawberry, date and a little soy or almond milk. We topped it wil chocolate sauce but you can eat it plain. It is every bit as rich and decadent as those junk ice creams at the grocery store, only better!

Pasta with a Roasted Garlic Tomato Cream Sauce

I did not know what to name this delicious, gourmet recipe it has so many flavors.
Tempeh bacon, roasted garlic, tomato sauce, roasted garlic cream sauce, veggies. My hubby said they should serve this at Macaroni Grill. Yeah, it's THAT good!
That's a high compliment because my hubby is an italian food lover and Macaroni Grill has always been one of his favorite restaurants, he loves the eggplant parmigiana there.

Sauteed Vegetables in Peanut Sauce

This is a delicious, simple and very healthy dinner recipe. My husband lists this as one of his favorites, although he is a big peanut butter lover. This will be updated on the website in a new recipe collection very soon.

It's been a challenge to continue to create recipes as we are currently travelling in a trailer as my husband searches for work. I have been creating some fun recipes but for now they will be on the simple side until I can get my fancy cookware out of storage.

Balsamic Pecan Vinaigrette

I will do my best with my photos, unfortunately I do not have all my fancy dishware to take photos as it is in storage. Hopefully I will be able to create beautiful photos of my food but please bear with me during this time of transition.

  Serve with baby romaine or spinach, diced apple, craisins, onion, avocado, broccoli or your favorite fruits and veggies. Blueberries would be delicious on this salad as well.

Delicious Breakfast Recipe


Chocolate Cherry Smoothie

This is a delicious, healthy breakfast smoothie and it is very high in nutrients!

Nutritional profile per 10 oz. serving: [3 servings in recipe]

Protein: 9% Daily Value
Calcium: 7% Daily Value

Vit. A 92% DV

There are many other nutrients contained in this smoothie but I think you get the picture that this smoothie has a HIGH level of nutrients in a SMALL amount of calories.

I also developed a Blackberry Banana compote with oats, dates, sesame seeds and pecans as a delicious, high nutrient breakfast for a cold winter morning. I did not get a picture of this recipe but my family LOVED IT! The fruit is sauteed in a tiny amount of coconut oil and maple syrup until softened, then the oats, nuts and seeds are added and sauteed until softened. It was served with fresh, homemade vanilla almond milk.

Recently I have been focusing on creating delicious recipes that are also very high in nutrients while being extremely healthy. I have spent the past several years recreating American comfort food into healthy vegan recipes using earth balance, whole grain flours, and natural sweeteners but I'd like to re-focus my efforts on creating very healthy recipes minimizing even processed whole grain flours, oils, and sweeteners.

I believe that every individual is on a different level health wise and I wanted to show that healthy plant based food can be every bit as enjoyable as standard american comfort food and it can be healthy. I do not necessarily eat this way on a daily basis though and it is not how I teach my clients to eat.


My Personal Diet

Breakfast: I eat several pieces of fruit or I have a green smoothie in the morning

Lunch: usually a large salad and an ezekiel english muffin with almond butter and agave or....Steamed vegetables, edamame, ezekiel english muffin, or vegetables sauteed in vegetable broth and seasonings

Dinners: vary widely but I always have a LARGE salad and a small portion of whatever I make for my family.

Comfort food is great on special occasions but in order to achieve optimal health you need to be consuming healthy food in its most natural state even minimizing whole wheat flours. I want to begin creating recipes that are every bit as delicious as the S.A.D. re-creations but that contain healthier ingredients, less refined oils and succanut or turbinado and more whole foods.

New Years Resolutions!

New Years Resolutions!
After the holiday binging and candy making I decided to start the new year off with healthy, low fat recipes. I create a lot of fun recipes but in my own life I actually adhere to a more low fat, whole foods diet.

I try to create recipes that will appeal to a wide variety of people at various stages of healthy vegan eating. But over the next couple of months I'd like to focus more on whole foods and oil free cooking so hopefully I'll have a lot of fun food for you.

Quinoa Enchilada Casserole


Oooooo this was GOOD! This recipe contains, low fat baked tortilla chips, quinoa, kidney beans, corn, salsa, spices and a fat free cheezy sauce on top! My family LOVED this recipe, it is very mild and kid friendly, but for those spice lovers you easily could add some heat to this one.


Vanilla Coffee Cake Strussel Muffins (oil free, low fat)


My husband LOVED these muffins, he is my sweet tooth tester. These muffins contain absolutely NO added refined fat. They are made with a combination of turbinado and liquid sweetener to give a delicious soft interior and crisp exterior. The topping contains no oil, it has oats, maple syrup and pecans that make up the bulk of the recipe for the topping. Icing is silken tofu, soymilk, turbinado and vanilla.

****My husband claimed these tasted like his favorite cinnamon rolls from the Mall, Yeah they are THAT GOOD!!!

Nearly Fat Free Chocolate Chip Cookies!!!


Cookies are extremely difficult to make without oil or some sort of fat, but these cookies are amazing.

My husband LOVES chocolate chip cookies, he is very picky about his chocolate chip cookies and he has never been a fan of my low fat versions, until this recipe!!

This was actually an accident, I used the recipe from the muffins and created this recipe and oh my is it fantastic!! They even have a little bit of a crunch like full fat cookies!!! Truly amazing!!!


They dark tint comes from the whole wheat flour, turbinado sugar, and maple syrup.

After a little break for the holidays with my parents I decided to post my newest holiday creations. Starting from the bottom: peanut butter cups, peanut butter fudge, english toffee top: chocolate carmels, turtles, peppermint truffles and the center is mint truffles.

Coconut Cream Pie


I am very proud of this recipe, it was extremely rich and creamy. It had a beautiful coconut flavor and the cashew whip cream turned out light, fluffy and delicious!!

I'm usually a die hard chocolate fan but this was truly delectable!! YUM!




Blueberry Surprise
My husband's mom makes a very good blueberry jello with whip cream, it was one of my husbands favorite side dishes. So I set out to create a vegan version and this turned out AMAZING!! The jello has lemon juice and is made with agar, a seaweed, then I added blueberries and turbinado. The cream is a cashew whip cream recipe I came up with that is light and fluffy. It took many attempts because cashew cream tends to be sticky and thick. This was divine!


We had a delicious Christmas dinner similar to Thanksgiving. My parents were here for a week and so I fell behind on my blogging. These recipes will also be coming out soon.
