BBQ and Gourmet Italian

Delicious Vegan BBQ on the Campfire!







This was a simple yet delicious vegan BBQ. I prepared a homemade Miso BBQ sauce, marinated the tofu and veggies and then we roasted them over the campfire.

I didn't take the time to make a potato salad so we had a fruit salad with poppy seed dressing, corn roasted over the fire and watermelon.

Delicious Roasted Veggie Kabobs



BBQ Sauce
1/4 c. light yellow miso
1/2 c. apple cider vinegar
1 c. tomato sauce
1 clove roasted garlic minced
1/2 Tb. vegan worcestershire sauce
1/8 tsp. red pepper sauce
1/4 tsp. hickory liquid smoke
1 tsp. garlic powder
1 tsp. onion powder
1/2 Tb. stoneground mustard
1/2 c. succanut
1 Tb. maple syrup
1 Tb. olive oil
Combine all ingredients in a large bowl, whisk together.
**this can be used to flavor veggie burgers, marinate veggies and tofu for kabobs etc...



I marinated extra firm tofu [remember to press the tofu in towels to remove all water or it will fall apart and not soak up the flavor], pineapple, onion and yellow bell peppers. You could use mushrooms, red bell peppers, broccoli, cauliflower, zucchini, yellow squash or any variation of veggies.


Blueberry Crisp



This recipe was quite the hit. I could have done this in a dutch oven but we prepared it in the oven while we ate the rest of our BBQ feast.




This is SO simple to prepare and it tastes amazing! It is like a split between a blueberry cobbler and a blueberry crisp.




I prepared the crust without the use of refined oils and used a combination of almond butter and cashew butter to give it a rich, full flavor!




Strawberry Banana Ice Cream



This is the most delectable strawberry ice cream and the best part, IT'S FAT FREE and low in calories, with no added sugar! YUM!!! It is a simple combination of frozen banana, strawberry, date and a little soy or almond milk. We topped it wil chocolate sauce but you can eat it plain. It is every bit as rich and decadent as those junk ice creams at the grocery store, only better!

Pasta with a Roasted Garlic Tomato Cream Sauce

I did not know what to name this delicious, gourmet recipe it has so many flavors.
Tempeh bacon, roasted garlic, tomato sauce, roasted garlic cream sauce, veggies. My hubby said they should serve this at Macaroni Grill. Yeah, it's THAT good!
That's a high compliment because my hubby is an italian food lover and Macaroni Grill has always been one of his favorite restaurants, he loves the eggplant parmigiana there.
