A fun twist on an Italian Romesco recipe..........

Rich, buttery roasted sweet potato smothered in a rich, creamy Italian romesco sauce.  This recipe came to mind because we have TONS of sweet potatoes and I needed to find a way to use them.  My family absolutely LOVED Italian food but I wanted to do something a little different than your traditional 'Pasta' dish.

The slight sweetness of the sweet potato perfectly compliments the sour/zesty flavor of the Romesco sauce perfectly!  I couldn't believe what a beautifuly compliment the flavors were.

I apologize that my posts have been infrequent.....my  computer is dying a very slow and painful death....not for the computer but for ME!  It freezes up randomly and sometimes it lasts for hours on end which makes posting extremely difficult :-(

I am hoping we can get it fixed soon so I can resume posting on a regular basis.  The computer is having a good moment and so I hurried to post this amazing recipe!

If you have been looking for a Gluten Free bread recipe that has a beautiful moist, chewy texture look no further!!   This bread will satisfy the whole family.....the biggest problem with me making this bread is that my Gf daughter guards this bread and does not want my non-gf hubby or non-gf son to touch it even though they both love the bread too!

I must confess I am a BIG.....HUGE.....Cheater!  Yep, I admit it......when it comes to beautiful, soft glutenated rolls I can't help myself....I have some!!!  I know, I know the gluten police out there would probably think I had completely lost my mind but there you go, I eat gluten!

I guess it is easier for me because I had a biopsy that came back negative for celiac but I went gluten free because I was 89 pounds and VERY SICK!  I did regain my weight and feel better but I ate gluten again for 8 years with no negative effects and felt fantastic as well as maintained a healthy weight....I went gluten free again to support my daughter but I have found it very difficult.  I LOVE breads....they are my weakness and there are VERY, VERY few vegan gluten free breads on the market and vegan or not none of them even come close to qualifying as bread in my book!!

Gluten Free Bread is NOT Bread!!  It might look somewhat like bread but the similarities stop there.....YUCK!  Even the most popular ones are stiff and only work if toasted!  That isn't bread to me....I want a soft, moist, chewy bread and gluten free bread just isn't this way.

I set out to create my own and I'll tell you I had my share of abysmal failures!  I created a great recipe but it seemed it only turned out when I made it......when others tried it didn't work out the same....this was frustrating to me to say the least!

Finally!!!  Finally!!  A simple, easy, basic recipe that was absolutely delicious!!  My daughter ate 5 peices and I finally had to stop her so she didn't eat the whole loaf for lunch!!!  She loves it when I make bread because she can actually have something that IS bread and not some 3rd rate imposter!

We love this bread!!!

*****Disclaimer.....this bread turned out fantastic for me but I make no claims that you will have the same result....gluten free bread is fickle at best and you may have a different result but I hope this recipe will work as well for all as it does for me.

The Best Valentines Day Dessert......

Decadent...ooey....gooey Gluten Free Chocolate Chip Raspberry Bars with an AMAZING rich creamy chocolate chip raspberry swirl ice cream....the best part...you do not need an ice cream maker!  

I have been MIA lately I know, I have missed blogging and recipe creating but honestly when I am stressed I cannot for the life of me think of recipe creations!  Seriously, I end up making baked potatoes and steamed veggies or rice and veggies every night because I honestly can't even think of anything better. 

I was working for a few weeks in a private school as an administrator.....it was very stressful.  There were many, many changes that needed to be made to the school and I felt overwhelmed but also felt that my hands were tied because of resistance from those over me.  It ended up that I left after a few weeks because the working relationships were just not there and it was an amazing decision for me!  The day after I left I felt the most peace I have felt in a long time.....

So, here I am back to blogging and I had my first successful recipe creation in a couple of weeks.....I know, I know how fitting that it is a dessert :-)  I love my desserts!

You will LOVE this dessert....it is so decadent and rich!!  My family love this.....my VERY picky hubby gave this a 10! 

****This can be made gluten free or with whole wheat pastry flour so the recipe will work for anyone! 

I made chocolate chip cookie bar dough, spread it on the bottom, topped it with a delicious raspberry jam, then more chocolate chips and finished it off with more chocolate chip cookie bar dough!!  This is a quick, easy dessert but it tastes really fancy!

The ice cream is SO EASY....No ice cream maker needed!   I started with a frozen banana base and added walnuts to make it rich and creamy, a little almond milk, vanilla, stevia and viola  ice cream that will rival any rich creamy ice cream you love!  This ice cream is actually healthy and has NO added sugars of any kind!
