Vegan Gluten Free Ice Cream Sandwiches

These vegan ice cream sandwiches are were a HUGE hit with my family.  The best part about these ice cream sandwiches is you DO NOT need an ice cream maker.  A good blender or food processor will make this delicious ice cream and then you just spoon it in between these amazing gluten free chocolate chip cookies.

I am not responsible for any weight gain that occurs from making these ice cream sandwiches because I can guarantee you will eat too many.  I unfortunately did.

Absolutely amazing!!  These are perfect for ice cream sandwiches or eat them on their own.

**This can be made with whole wheat pastry flour for those who are not gluten free.


You can add more soymilk if needed but do so slowly, if you add too much you will get runny ice cream.

Wow! These look delicious. I'm fairly new to the merits of a plant-based low-fat diet, but have had amazing results in the last several months. This will be a nice once in a while treat. I just made the cookies and they came out great. I'm curious to know how well these would hold-up in the freezer. Any thoughts on that?

Stephen, congratulations on your success with a plant-based diet! The cookies freeze extremely well, however freezing the entire ice cream sandwich would be a little more difficult. They could be frozen for a few days if they are wrapped and stored in a freezer bag or other freezer container. I froze one and ate it two days later and it was still good. Hopefuly that helps.
