Vegan Hamburger Helper Style Recipe


Why in the world would I make a vegan hamburger helper recipe?

I'm sure many of you remember as a child or maybe when you were in college and didn't know how to cook, you ate hamburger helper.  Well, I am finding that many parents are struggling to get their kids to eat healthy food.  Kids love shell pasta, they love cheesy food and so I created the vegan hamburger helper recipe to satisfy the whole family! Mom is happy because the kids are eating carrots, onions, celery, and bean and the kids are happy because it tastes SO GOOD!  It's a win win situation!

If you are a college student living on a budget, used to mixing up a bunch of boxed garbage and maybe have decided to try and improve your health....here is a recipe to fulfil that comfort food taste only good for you!

No matter what the situation, this hamburger helper style recipe is easy to make and tastes amazing!  I hope you enjoy it!

1 c. crumbled Lentil burgers
1/3 c. onion diced
1 clove garlic minced
3 Tb. vegetable broth
1 (15oz) can italian diced tomatoes
1 c. broccoli
1/3 c. carrot juice
1 Tb. italian seasoning
1 c. cheesey sauce
1/2 tsp. garlic powder
1/2 tsp. salt
8 oz. shell pasta cooked
Sautee the onion, garlic and broccoli in vegetable broth until onion is translucent.  Add the carrot juice, diced tomatoes, italian seasoning, garlic powder and salt.  Simmer on low heat 15 minutes. Add cooked pasta, lentil burgers, and cheese sauce and stir until warmed.  Serve.

Super easy ingredients, I'm excited to try it. Do you have any suggestions of what to do if you don't have a food processor? (To make the black bean burgers)

If you have a potato masher or pastry blender you can mash the beans with that and then mix in the rest of the ingredients. If you don't have either of those you can use beaters or even a mixer and that will work too. Hopefully that helps. Let me know how you like the recipe.

This looks really yummy! What can I do instead of wheat noodles? Do you think that rice ones will hold up?

Brandi- We actually used brown rice pasta shells so they work excellent in this recipe!

Okay, made this for dinner :) It was a little involved since I had to make the bean burgers and cheese sauce, but SO worth it! My whole family enjoyed it and said I should make it again! Thank you so much. Oh, and that cheese sauce is amazing!!!

I'm doing a 9 day detox (Dr. Ian's Fat Smash) that involves a completely vegan diet for the next 9 days. With these recipes, and especially if they taste delicious, I may not be so opposed to a vegan lifestyle for the long haul! Thanks for having this as a resource for us "attempting to reform" carnivores!!!

I think there must have been a mistake with the salt for the cheese sauce. I had to throw out the first batch and try again. I am a salt addict, but 2 tsps is just WAY too much. The second time I used 1/2 tsp.

The second time around, it was delicious. I used the Morning Star Spicy Black Bean veggie burgers and it was awesome.

I kinda made this last night! I am a little lazy so I put everything in a casserole dish and cooked it in the oven. Delish! I used seitan instead of burgers and cauliflower rice (rice made from cauliflower) instead of pasta. IT WAS GREAT. Kid and Husband approved. I think you could put the cheese sauce on anything and it would taste great! Thanks for a great recipe!

when do you add the lentil burgers to the recipe?

I have changed the recipe to reflect the addition of the lentil burgers. They are added at the end with the pasta and cheese sauce. Thanks.

Made this tonight with GF noodles. We made the lentil burgers from scratch, so it took quite some time to prepare the entire meal ... but it was VERY worth it! The whole thing was amazing!
