Maple Coconut Cream Cinnamon Millet Breakfast


I know, it's a long name but I wanted to portray the diverse flavors in this delicious breakfast! Coconut milk, maple syrup, cinnamon stewed fruit (apple, dried cranberry] in millet.

This was an excellent breakfast for a cold morning. Millet only takes about 15 minutes to cook and it has a delicious flavor! We served it with a little soymilk but you can serve as it is as well.

Chocolate peanut butter cups

Oh yes, these are as decadent as they look!! Okay, for all you chocolate professionals out there you will notice I did not temper the chocolate. Naughty, naughty I know but I was in a hurry and just wanted to see if the recipe would even turn out before I went to all the trouble to make them pretty. Plus my husband will probably eat them all in 30 seconds so looks really didn't matter for this batch :-D The chocolate peanut butter cup recipe is not the healthiest recipe but it is certainly better than the ones you buy in the store and makes an excellent holiday dessert. This recipe contains, all natural peanut butter, organic powdered sugar, dairy free dark chocolate.


Tempeh Taco Salad Recipe

This turned out delicious!! My daughter said, "mom you should open a restaurant."That was a high compliment from the pickiest eater on the planet! I must say, this was fabulous!!! I ate a little too much of it because it just tasted soooo good!  Yes, healthy food can taste amazing!!!

The tempeh taco salad recipe contains brown rice, black beans, corn, taco seasoning mix and dairy free homemade sour cream and guacamole.  This recipe will be featured in my upcoming recipe book.


Pumpkin Spice French Toast


The idea for this recipe just came to me after my morning workout. I created it in the kitchen while my family was still sleeping. They really enjoyed it. The pumpkin and spices made a delicious fall breakfast.

This is a simple, delicious fall recipe.  Great Harvest whole grain bread, pumpkin, tofu, nutritional yeast, with pumpkin pie spice syrup. Yummy!

Sauteed Asparagus a
nd Almond Feta Sandwich

Don't be fooled by the asparagus, this sandwich is delicious! I sauteed asparagus, orange bell peppers and onion in vegetable broth and a touch of olive oil until softened. I served the vegetables on toasted whole wheat bread with veganaise and homemade almond feta cheese, topped with tomatoes and a little baby romaine. You don't have to make your almond feta pretty, just spread it all over the sandwich and enjoy!!!

Gluten-Free No Clam Chowder

The secret to the texture of this no clam chowder is coconut meat sauteed in a garlic, kelp mixture in place of clams. This was rich and creamy and it has no flour, it is gluten free. Cashew cream will thicken when heated so no flour is necessary!

This was FABULOUS!! I love chowders, especially in the fall.




Roasted Vegetable Salad with Garlic Vinaigrette



I roasted garlic, orange and red bell peppers, parsnips and yams in the oven in a vegetable broth sauce. I served them over a bed of spinach and topped it with a roasted garlic vinaigrette.

This was an amazing salad, the dressing has a bit of a 'bite' to it. If you don't like a vinegar bite you could tone it down a bit. I LOVED it!!






Roasted Portobello Burger

This was so amazing. Yes, that is just a portobello mushroom cap!! This is so simple, marinate portobello mushroom caps 30 minutes, sautee then roast in the oven. They are so good!!!

We really enjoyed these. I always serve veggie burgers on toasted whole wheat bread because whole wheat buns at the store are a health nightmare but you can use buns if you want!

Fall Harvest and The Holidays

Holiday Egg Nog

I am a pure, Egg nog hater, have been my whole life! Actually, I hate the commercial, chemical laden egg nog with sugar syrup on steroids!! I'm sure you are wondering what this photo of egg nog is doing on the blog......... because I LOVE my egg nog!!! This is a delectable cashew cream egg nog, my son wouldn't stop drinking it. It is the perfect addition to any holiday meal.


Pumpkin Mouse with Pecan crumble and Chocolate Chips

Ooooo this is good stuff!! Sweet, creamy pumpkin mousse. My kids were begging for a dessert and I thought if I could combine a fall vegetable with a touch of sweetness atleast I'd feel better about serving them a dessert. This was simple to make and tastes amazing! It would make an amazing simple dessert on a holiday buffet table.




Raw Almond Thumbprint Cookies with Chocolate frosting

These are a delicous, sweet almond cookie I made in the dehydrator. I made a delicious raw chocolate sauce and then my hubby insisted that chocolate frosting would be better, so they can be made as a raw cookie or you can whip up some chocolate frosting for them, either way they are a fun little, healthy treat.






Brussel Sprout Au Gratin

A Peaceful Thanksgiving Feast!!


I know there are many who believe that you can't have a delicious vegan Thanksgiving, well you absolutely can!! On the left you have homemade tofurkey, mashed potatoes and gravy, the top of the plate is tempeh sausage stuffing, the right side is Cranberry salad with 'whip cream', green bean casserole in cream sauce with homemade onion rings, A croissant roll, and of course yam casserole with an oat cinnamon crumb topping!


Cashew Cream Egg Nog

I served a beautiful, light, creamy Egg Nog with our Thanksgiving dinner. As a child I HATED Egg Nog, that junk you buy in the store is not edible at all. It is so thick and so sugary that even as a sugar loving kid I couldn't drink the stuff. This egg nog is light, but very creamy. It is heavenly! I created this in a cashew cream base because I think it gives it a richer, creamier flavor than soymilk.



Gala Apple Pie

I used gala apples, a little coconut oil and maple syrup to flavor the pie. It was hard to stop eating it!








Vegan Chocolate Mousse Pie with Oreo Crust!

HEAVENLY!! This pie was so decadent and creamy. This was a hit with my chocolate loving husband. While it may not be a very traditional Thanksgiving pie, my husband insisted that I come up with a chocolate mousse for Thanksgiving and so I did. It was amazing!
