These were super simple to make and my family really liked them.  I looked at a lot of cabbage roll recipes and learned that they are supposed to be quite simple and basic, the flavors are very mellow and unassuming and that is what I experienced with the recipe I came up with, however I think next time I might flavor the lentil mixture a bit more.

I thought I would share the picture with you but on the Facebook page no one seemed too excited about the recipe so I think I'll just leave it as a picture of the week instead.


Potato Farls


Okay first I must say that I DO  love my readers but seriously my followers on Facebook must be completely OUT OF THEIR MINDS!!!

This amazing Irish breakfast recipe got 3 likes, yep you read that right.....3 likes.  What is wrong with you people?  My kids absolutely LOVED these!!!  My husband loved these too we just couldn't get enough of them.   C even said he wanted them for his birthday breakfast and that is a huge deal in this house when you say you want it for your birthday meal!

We served them with a little salt and ketchup and they were fantastic. The ketchup is probably  not 'traditional' but we really liked it.

I think you could dress these up with many different toppings.......
Salsa
Sour cream
Guacamole
Ketchup
Serve topped with black beans and salsa

I realize those are not traditional toppings but you could have a lot of fun with these.

I'm not going to post the recipe here, but if anyone would like the recipe please contact me or post in the comments and I would be happy to send it to you.  If the recipe seems to be popular and a lot of people want it I will post it but for now I'll wait.


Shamrock Shake


This little number was a HUGE hit on Facebook........
I got an email about McDonald's Shamrock Shake recipe, I subscribe to all kinds of recipe emails to get ideas.

I thought, hey, I could make a healthy version of that for St. Patrick's Day.  I made this for my kids  yesterday as a snack and they both loved it.  This is a great way to get some leafy greens into your kids and they won't even care that this is green because it is supposed to be :-)

Decadent, creamy and rich vegan version of Olive Garden's Black Tie!  This rich dessert features a thin dark chocolate brownie crust, topped with a thick creamy chocolate mousse, layered with a creamy vanilla custard and topped with homemade dairy free white chocolate swirled with dark chocolate.  The ultimate chocolate lovers dream dessert!

I created this recipe for a very wide audience, this olive garden black tie recipe is gluten free but can easily be made with whole wheat flour for those who do not need to be gluten free.  It is also soy free, I realize that most vegan cheesecake style recipes call for silken tofu and while I believe tofu is an excellent food, some people may have soy allergies and so I thought it would be best to make this dessert soy free as well.

 It is absolutely possible to make delicious vegan desserts without the use of tofu if desired. I did not make this soy free for those who believe soy is going to somehow magically turn them into a newt or somehow change their gender in the middle of the night without them knowing it!!  Check out the actual scientific research on soy before you go believing all the outrageous claims being made all over the internet.  Seriously a legume is somehow powerful enough to wreak havoc on your hormones, really?  However, estrogens secreted in cow's milk is a whole other story.........but we'll save that for another time.

Is this recipe Complicated?

Well, yes and no.  If you aren't used to cooking this recipe may seem very daunting.  It really isn't, yes, it does have a lot of steps but it flows really well and is actually not difficult.  Time consuming? Yeah, it is probably a more time consuming dessert if you are comparing it to whipping up some chocolate chip cookies or brownies. I would say this recipe probably takes a couple of hours with chilling time.

I don't mind making it but some may want to reserve this for special occasions.


This recipe contains oils.....I thought you said refined oils are not a healthful food?

Okay, you got me!  That is correct, refined oils are not health foods and really should be avoided or consumed VERY rarely. Refined oils are best avoided for those suffering from insulin resistance or diabetes.  However, this recipe was made as a special occasion treat such as a birthday or holiday.

Why did I create this recipe?

My husband is a die hard fan of the black tie at Olive garden and lately he has been talking about it relentlessly!  Well, Olive Garden is a celiac's or vegan's worst nightmare!  Olive Garden has yet to offer any gluten free options or vegan options on their menu.  Not only is their menu very unfriendly so is the staff and Olive Garden corporate has made it very clear they have little interest in offering options to gluten free, vegetarian or vegan patrons.....so we don't eat at Olive Garden!   I MUCH prefer going to Macaroni Grill or other Italian restaurants as they are very willing to accommodate any dietary preferences or food allergies!

The Old Spaghetti Factory now offers gluten free pasta and many vegetarian or vegan options!  I'm still surprised Olive Garden refuses to accommodate a variety of individuals but it's their loss I suppose.

My husband is a vegetarian but does consume dairy and eggs because he simply cannot resist desserts so of course if we did go to Olive Garden he would NOT go without his black tie but he has been a great sport in avoiding Olive Garden because all I could have is the WATER!!!  So I decided to take on the challenge of creating the famous Olive Garden Black Tie in a vegan version!  I have attempted this before with so-so results but this time it was an absolute success!!

 Rich, creamy, decadent brownie mint ice cream recipe that does NOT need an ice cream maker!   My kids were frantically scooping this minty treat into their cups and fighting over who was getting more.  The best secret about this delicious ice cream......it contains spinach.  Shhhhh don't tell the kiddos, they'll never know.

I have been participating in a 30 day boot camp that requires me to consume two green smoothies a day and I thought I'd make it into a delicious dessert and get some greens into my kids at the same time.  The idea for this delicious ice cream was born and it is a delicious green smoothie/dessert all in one!
**Don't let the spinach in this recipe scare you off....   

The only thing the spinach gives to this recipe is the amazing green color which goes perfect with its mint flavor.  Kids expect mint ice cream to be green, use that to your advantage and get some greens in those kiddos.
Unfortunately I think I ate a little too much of this ice cream, this ice cream could easily grace any dessert table and yet it is healthy and can be easily made without any refined sweeteners at all.

I have been striving to reduce the amount of refined sugar we eat in this house.  
Just as a clarification my definition of refined sugar includes:

  • agave nectar
  • maple syrup
  • turbinado sugar
  • succanut
  • brown rice syrup
  • coconut or palm sugar
  • honey
  •  
Any sweetener that is a concentrated source of sugars that is NOT the original WHOLE plant!  Yes, this recipe does contain some maple syrup but you can certainly leave it out and use more dates.  

Of course I would never use white sugar in any form, however, I do not use concentrated sweeteners and consider them whole foods, because the reality is, they are NOT!


They contain very little or no fiber, no protein, no fat, very minimal vitamins or minerals and do NOT grow on trees, plants or in the ground therefore they are NOT whole foods.  Dates and other dried fruits are the only whole food sweeteners available.  Eventually I would like to reserve all concentrated sweeteners for special occasions only and right now we are quickly moving in that direction.

Delicious, melt in your mouth Mexican wedding cookie recipe to grace your Holiday dessert table!  These little round cookies are an absolutely delicious vegan and gluten free version of the ever popular Mexican wedding cookie also known as Russian tea cake.   My grandmother used to make the most delectable collection of Christmas candies, including these delicious little cookies.   I have been thinking a lot about her this Christmas season and all the wonderful traditions that she started in our family.  The delicious holiday desserts and candies are one thing I fondly remember about my grandmother and in her honor just before the holidays I wanted to post my delicious rendition of her amazing, melt in your mouth Mexican wedding cookie aka Russian tea cakes.

I know I have been MIA for a few days, it has been an extremely busy holiday season for me, and hardly any of my holiday shopping has been done, I have been enjoying family and enjoying many other aspects of the holidays and I have been avoiding the crazy shopping that seems to occur this time of year.  I have been reflecting on those who live in third world countries who have so much less than we do and how often we forget to serve the less fortunate, to clothe the naked, feed the hungry, comfort the widow, to serve others and give of what we have.  If more of us would step outside of our small little busy world we create for ourselves and do what is REALLY important this world would be a much better place for ALL!


I haven't been able to thrust myself into the shopping frenzy, the gift buying madness because it all seems so selfish and so trivial when you reflect on what really matters in life.  As long as there are people on this earth who are suffering, starving, cold, and in need the last thing on our mind should be  buying gifts for those who already have more than they need, we should be giving of our substance to those who are truly in need!  


It says a lot about a society that is richly blessed when they forget the hungry, the homeless, the naked, the widow, the suffering and then go and  spend  ridiculous amounts of money buying 'gifts' for those who have no need! 

So even though many would see my lack of shopping to be laziness or a lack of Christmas spirit, in reality it has been my hearts desire to spend this season with more in my heart than just thoughts of buying gifts for those who have no need for them.

Okay, so I guess it is time to jump off my soapbox and post my delicious recipe.  But maybe as you prepare this wonderful holiday recipe you will remember my words and hopefully you will feel inspired to do some service for someone in need.  Enjoy!

If you are a chocolate chip cookie fan this new vegan holiday candy recipe will have you doing cartwheels!  Delicious chocolate chip cookie dough is hand rolled and then dipped in delicious, rich dairy-free melted chocolate and then chilled to perfection!

These little truffles were a HUGE hit with my family!  My kids kept begging for more, however, I only made about 8 total because I did not want my kids gorging themselves into sugar induced mania!   They have had more than their share of sugar and junk food this holiday season and I did not want to contribute more to the problem.

My hubby has finally started to recognize the health damaging effects of sugar!  He is a sugaraholic of the worst kind.  He doesn't have one cookie, or two, he will eat 5 cookies and then complain about not feeling well.  He has begun struggling with headaches, joint problems, inflammation and host of health problems.  He finally came home yesterday and said, I need to get off of sugar!  He has said this many times before so I generally do not get overly excited when he says it but I hope this time he will actually do it.

He is on Day Two of not eating sugar!  Who knows if he will make it home from work without sugar, and I know it is tough over the holidays to avoid it and I am sure he will have dessert at the Christmas parties but starting January I think we will all be making quite a few changes.

So, what does this mean for the blog?  I will be focusing on healthy, whole foods in the coming year!  The recipes will still be as delicious and satisfying as ever but the desserts will probably begin to be roasted apples and cinnamon or lightly sweetened with much less sugar!  Hopefully my blog readers will also take the challenge to reduce refined sweeteners and embrace an even healthier lifestyle in the coming year!

Okay, enough rambling on about not eating sugar, LETS HAVE SOME TRUFFLES!!!

Brownie Chocolate Mousse Dessert

This decadent dessert begins with a rich, gooey chocolate brownie crust  filled with a light, yet rich chocolate mousse baked to perfection and then spread with a smooth chocolate mint ganache.    Yes, this is the perfect mix of decadent, rich chocolate with a hint of mint to give it that holiday twist.  You can certainly top this with crushed mint candies to really push it over the top for your holiday dinner party. 

When my husband first tasted this dessert he couldn't stop raving about it!  He is certainly a chocoholic and is the perfect judge of the quality of any chocolate dessert.  When I asked him what he would rate this delicious dessert his answer was 9.9!

I asked him what makes it a 9.9 instead of a perfect 10?

I always like to know what improvements I need to make so I can perfect future recipes.  After tasting the dessert myself I couldn't imagine what in the world he would say about it that would dock points, this dessert is absolute perfection in my mind.  Well, his answer was......

It is a 9.9 because I am going to eat to much of it and make myself sick!

Okay, so the point docking had nothing to do with taste or texture.....  I explained to him that he was supposed to rate it on taste, not whether or not he would eat too much of it and end up feeling sick afterward.  He said, 'Oh, then it is a perfect 10.'

This brownie chocolate mousse mint dessert can be made in so many ways so please try different variations and enjoy it!  I would highly recommend serving this at dinner parties, it will certainly be the highlight of the evening!

***This recipe is gluten free but it certainly does not have to be gluten free, you can use regular whole wheat pastry flour in place of the coconut and brown rice flours.

These vegan ice cream sandwiches are were a HUGE hit with my family.  The best part about these ice cream sandwiches is you DO NOT need an ice cream maker.  A good blender or food processor will make this delicious ice cream and then you just spoon it in between these amazing gluten free chocolate chip cookies.

I am not responsible for any weight gain that occurs from making these ice cream sandwiches because I can guarantee you will eat too many.  I unfortunately did.


Oil Free, Low Fat Vegan Chocolate Chip Cookie Recipe


Absolutely amazing!!  These are perfect for ice cream sandwiches or eat them on their own.

**This can be made with whole wheat pastry flour for those who are not gluten free.


You can add more soymilk if needed but do so slowly, if you add too much you will get runny ice cream.

Delicious Healthy Donut Recipe

Mouthwatering Healthy Donuts

I wasn't sure what to expect when I tested the first donut but much to my surprise it was very moist, light, soft and delicious!  These donuts are much more delicate and soft than the cake donuts you buy at the store, they are almost melt in your mouth soft and yet the perfect texture.

This was a recipe my daughter has been BEGGING me to make.  She has been craving gluten free donuts.  I have tested a few recipes with so-so results and then finally...... WOW!!!   These donuts are AMAZING!  I purchased a donut pan just for this recipe and luckily, it was worth it.  I certainly was not going to make fried donuts so baking was the only option and without a donut pan you have to make dough which is too thick and the donuts come out heavy.  With a donut pan you make a batter to pour in and the donuts come out heavenly.

Most vegan donut recipes are a little heavier than I like but this vegan donut recipe is absolutely light and fluffy.  I like my donuts to be very light and moist and this recipe certainly delivers on that point.  I hope you enjoy them as much as we did.

Okay.....I am being a FOOD TEASE!!!

Why do I say I am being a food tease?

Okay, just don't get mad......  I did not write the recipe down for these brownies!!!!


WHY?  Why in the world would I not write the recipe down?

I have no idea, I just thought I was going to whip up a delicious vegan, gluten free brownie recipe for my family for Sunday dessert.  I wasn't expecting much out of these brownies except....A GREAT CHOCOLATE FIX!  Well, much to my surpise my creation consisting of......a little bit of this......... a dash of that.......... and a dump of this turned out to be a delicious, fudgy vegan gluten free brownie with no oil to boot!

Here is where my loyal readers come in......

I took a photo of the final recipe, my husband said this was the absolute BEST of the three brownie recipes I created so I think you will enjoy it.  I must warn you, this is a FUDGY brownie so if you are a fan of cakey brownies this probably isn't the best recipe for you.  However I do have a recipe just for those who like cakey brownies so I haven't left you out.  Click Here: Gluten Free Cakey Brownie Recipe

Fudgy Gluten Free Vegan Brownies


DELICIOUS! Perfect fudgy brownies.

***Note:  You can certainly leave out the chocolate chips to lower the fat content if desired.

***For those of you who are not gluten free:  You can use oat flour or regular whole wheat pastry flour in these brownies and they should turn out delicious!


*** Very Important:  Brownies will be VERY fudgy when they come out of the oven. They will firm up as they cool. If you don't mind the doughy, fudgy consistency you can serve them hot, but if you want them to firm up you will need to let them cool off before serving.

Gluten Free Vegan Graham Cracker Recipe

These gluten free, vegan graham crackers have an amazing resemblence to traditional graham crackers in taste and texture.  Enjoy these delicious gluten free vegan graham crackers with an ice cold glass of almond milk, crumbled in some fresh homemade soy yogurt, as a delicious berry pie crust or smothered in nice warm chocolate frosting!

My kids devoured these crackers!  They are much healthier than the refined, processed junk you find in the grocery store.  These gluten free vegan graham crackers are made low in sugar and high in fiber.  If you have little toddlers who LOVE crackers make up a double batch of these and store them in the freezer.  You can feel much better about giving your children these gluten free, whole grain, low sugar graham crackers.

I have used these graham crackers for a cashew ice cream pie crust and it was absolutely delicious!  If you have been craving graham crackers but don't enjoy the gluten free ones available give this one a try!

For a Non-gluten free vegan graham cracker
or as my daughter would say....a Glutenated Graham Cracker

For those not on a gluten free diet you may be able to use whole wheat pastry flour, however be aware that the recipe was designed for gluten free flour which may absorb more moisture so you may have to tweek the amount of flour you use in the recipe if you convert it to whole wheat pastry flour.   If you aren't moderately handy in modifying recipes it may not turn out.

Gluten Free Vegan Graham Cracker Recipe

1/4 c. brown rice syrup
1/4 c. applesauce
1/3 c. turbinado sugar
1 tsp. vanilla
1 1/2 c. all purpose gluten free flour
1/3 c. coconut flour
1 c. sorghum flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. soymilk

Preheat oven to 350.  Roll out and cut into rectangles, be sure to roll them thin enough about 1/8 inch thick.
If you do not roll them thin enough they will be softer like a cookie and less like a crispy cracker.  You can use a fork to make the impressions and a knife to make the impression like the photo if you like.  Bake them at 350 for about 10 minutes. 

*Depending on how thick you roll your crackers it may take less or more time to bake them.

This is a delicious combination of flavors, banana, peanut butter, chocolate chips.  You can't get much better than that!  This dairy free soy free ice cream is also sugar free.  The chocolate chips have sugar but you can certainly use grain sweetened chocolate chips or even cacao nibs if you want a truly sugar free dessert.  This dairy free, soy free ice cream really delivers the flavor you want from a rich ice cream without the fat, calories, sugar and other unwanted ingredeints. We served it over warm gluten free cookies and it was divine!

Vegan Soy-free Whip Cream


This vegan soy free whip cream recipe is my pride and joy! It is SOOO easy to make and yet SO delicious.  My son was licking the beaters, the bowl and eating it with a spoon.  You will love this recipe.

***If you cannot find UltraGel at your local grocery store, search it on the internet.  It is an excellent ingredient for gluten free and vegan baking.

I took two different photos, the lighting wasn't great but this pie was amazing.  I made it with a gluten free brownie crust!  This is a very rich, decadent dessert. The topping is a beautiful, soy free vegan whip cream recipe!  I created the soy free vegan whip cream recipe just for this amazing dessert.  I have been searching for the perfect vegan whip cream recipe and have only found extremely complicated recipes....so I created my own.

This soy free vegan whip cream recipe does require a special ingredient that may be a little hard to find for some, it can be ordered on the internet, but trust me....it is SOOOOO worth it to make this decadent vegan soy free whip cream recipe!

Wheat free Coconut Strawberry Chocolate Chip Pie or Bar


I was at my mom's house for a family dinner and everyone was talking about what they wanted for dessert.  I decided to combine everyone's favorite flavors into one dessert!  This is delicious strawberry chocolate coconut dessert recipe is the result.   It looks like a pie but it is a little more like a bar, my mom just didn't have a small enough baking pan for this recipe so I put it in a pie pan.  You can make this strawberry coconut chocolate dessert recipe gluten free simply by using certified gluten free oats.

Everyone loved it and the whole dessert was gone in a matter of minutes!  The combination of flavors in this strawberry chocolate dessert recipe worked really well!    The crust is more like a cookie bar bottom, the filling can be firm or a little more like pudding depending on how you make it but it is a delicious dessert that satisfies those who need a little chocolate in their dessert.

These are delicious wheat free chocolate chip cookie bars!  They can be gluten free chocolate chip cookie bars by simply using certified gluten free oats.  I wanted to come up with a fun Sunday dessert and I found whatever ingredients were hanging around in my kitchen and this is what came out!  It is a rich dessert, however, if you are used to highly sugared normal desserts this wheat free chocolate chip cookie bar recipe may not be sugary enough for you.

I use about 1/3 or less sugar in my dessert recipes than most, I can't handle the high amount of sugar in most desserts, it is sickening to me.  So be aware that this is a delicious dessert but it does have a low sugar content.  Another tip **Do not overcook or the cookie bar will dry out!

If I were to properly name this dessert it would be wheat free, dairy free, vegan, oil free, low sugar chocolate chip coconut cream cookie bar recipe.  This is a low sugar cookie bar recipe but it certainly does not sacrifice any flavor.  It is also an oil free dessert recipe, but again it is very rich and decadent.  Enjoy!

Mother's Day Chocolate Chip Cookie, Hot Fudge Sundae Dessert


Describing this recipe is a mouthful!  It is a low fat, vegan, gluten free, homemade soy free, dairy free vanilla ice cream chocolate chip cookie hot fudge sundae recipe!  How is that for a name?   

I used my usual gluten free chocolate chip cookie recipe and pressed the dough into a hamburger bun  mold to create very large cookies for the sundaes.    It took an extra 4-5 minutes of baking time for the cookies at this size so if you make this recipe take this into account. 
I wanted to create a delicious ice cream recipe for all mom's to enjoy. 

I decided to create a dairy free as well as soy free ice cream recipe.  This turn out very firm and delicious, my family LOVED this ice cream.  ** You have to BLEND this recipe for a long time or it will end up being gritty.  A high speed blender is highly recommended!  If you do not blend enough it will not be creamy. This dairy free soy free ice cream recipe is simple to make and so delicious.

Vegan Gluten-free Chocolate Bundt Cake with Mint Frosting

This is the latest amazing gluten free, vegan recipe to come from The Peaceful Kitchen.  I let my son choose any kind of cake he wanted for his birthday and this is what he chose.  This is the most moist, soft, decadent gluten free and vegan chocolate cake recipe you will find.  All of the children at the birthday party came back for seconds, some even came back for thirds.  This gluten free, vegan chocolate cake was a HIT and not a crumb was left at the end of the party!

I generally create oil free, low sugar recipes, but for my children's birthday parties I allow them to choose whatever dessert they want and I generally keep it fairly traditional, albeit in a gluten free, vegan way.  If you are looking for a gluten free, vegan cake to delight even the most discerning tastes this cake will deliver.  I hope you enjoy this cake as much as we have!

This is a delicious, light mint icing recipe.  I created this mint icing recipe with a lower amount of earth balance than most vegan icing recipes.  The lower fat content does make it a thinner icing but as you can see from the photo above it makes a beautiful icing.

Vegan Gluten Free Chocolate Cake with Vanilla Chocolate Chip Filling

Vegan Gluten Free Vanilla Cream Stuffed Chocolate Cake Recipe

This vegan, gluten free chocolate cake recipe was created as a birthday dessert.  I took on the challenge of striving to create a vegan, gluten free, low sugar, oil free cake recipe.  If you have ever tried to make an oil free cake, or even a gluten free cake you understand the enormous undertaking this creation was.
One trick I have learned in low fat and gluten free baking is the amazing properties of coconut flour!  Coconut flour eliminates the need for xanthan gum in most gluten free baking and it also gives moisture to oil free baking. 

I am not a fan of powdered sugar, I rarely use it except on special occasions but I personally do not like to eat it.  I designed this cake with an oil free, powder sugar free frosting. The frosting is thin but it has a wonderful flavor. This cake turned out VERY light, moist and flavorful!  It was a HUGE hit with my family...that is until our golden lab ate the rest of it on the table!
