Gluten free Cornbread and Dinner Rolls.....Mmmmm

When I was sitting at my desk trying to decide what to make for dinner this overwhelming craving for 'bread' came over me and I knew that I did not have time to make a yeasted bread......then I realized we could have soup and cornbread!  Perfect!

As a last minute idea this cornbread recipe had to be simple, yet, delicious! As you can see this gluten free cornbread has an excellent crumb to it, it baked up beautifully and tasted delicious with a hint of 'honey butter' that I made using earth balance.

I have been barely surviving through FREEZING temperatures for the last several weeks....in fact, it has been at least 20 degrees below freezing for weeks now!  My body just does not handle the cold well at all and I end up shivering and freezing in the house with the heater on, space heaters, and the fireplace!  I am getting really tired of the cold.

I know people wonder why I live in such a cold climate and to be honest......it is because I don't have a choice.  Hubby has applied for BAZILLONS [okay maybe a little exaggeration]  of jobs outside of the state with no luck....so without a source of income anywhere else I am stuck.   If anyone knows of any good jobs in sales management, market analysis, or marketing director in any WARM non-desert state in the U.S. let me know!

So, back to the cornbread, when you are freezing your can off in frozen tundra wasteland :-)  yes, that is what I call the good ole state I live in....I realize there are colder places in the U.S. but this is colder than I can stand so...that's the nickname it gets :-)  When it's cold outside nothing says comfort food like hot soup and cornbread!







Gluten Free Dinner Rolls

I have been seriously craving BREAD!!!  I think every gluten free individual goes through this.....frequently, well that is my opinion but how could you not?   Gluten free breads often leave much to be desired....the craving for that soft, stretchy texture of GLUTEN......oh what wouldn't we all give to sink our teeth into those delicious parker house dinner rolls......Mmmmmmmm

Okay, so as much as I'd like to tell you these are exactly like a gluten free version of a parker  house roll I must confess......I haven't replicated that texture yet.....but these are VERY soft and they do have a slight chewy texture to them.  They are not crumbly at all and they are NOT firm like most gluten free rolls either!

My non-gf hubby who is both a chocoholic and a bread afficianado liked these a lot!  That actually says something because he is VERY picky about his bread.  Most of the whole wheat breads I buy he doesn't like, he is extremely picky about his dinner rolls as well but he kept eating these and really enjoyed them so they definitely have his stamp of approval.

 I must confess, even though I am trying to lose the extra 10 pounds I gained over the holidays.....Ooops did I let that slip :-(

I ended up pigging out on these rolls and I did even put a hint of earth balance on them....they were nice and warm and the earth balance melted beautifully.....Mmmmmm nice hot rolls with melty 'butter' there is nothing better in the my world...except maybe chocolate, but its close.

These rolls REALLY hit the bread craving spot for me perfectly!

The best part about these rolls aside from the soft texture is they are EASY!

****You could make these Non-gluten free by using roughly 2 1/4 c. whole wheat pastry flour instead of the gluten free flours and remove the xanthan gum as well.  When you add the wheat flour make sure you only use enough for form a soft ball of dough and no more.....

Gluten free bagels with a chewy inside and a lightly crispy crust.  I tested a couple of bagel techniques and this one turned out perfectly.  My son who is not gluten free kept begging for more bagels, my husband who is a bagel afficionado really enjoyed these bagels as well.  I was so happy to see that my whole family whether gluten free or not could enjoy a gluten free yeasted bread.  Normally the gluten free breads are exclusively eaten by the GF members of the family because they aren't very good.  

My goal in creating these recipes is to make gluten free delicious for everyone!  Celiacs and others who must eat gluten free should NOT have to sacrifice taste or texture.  I wanted to keep you updated on all the recipes that are being created for the Gluten Free Breads E-book coming up at the end of the month.

Rosemary Butternut Cream Sauce over Pasta


If you are in need of a FAST, easy dinner, this is perfect.  You do have to bake a butternut squash but honestly, I pop it in the oven an hour before I need to make dinner and forget about it.  It is so easy, you don't really have to 'do' anything.  If you forget to do that you certainly could use canned squash if needed, or you can bake squash and freeze it to make it easier to use when needed.

These blueberry muffins are the lightest, fluffiest muffins I have EVER tasted...gluten free or not!  They will stay moist sitting on the counter for up to two days!   If you love a light, moist, warm muffin in the morning this is definitely a recipe you are not going to want to miss!!

I know I have been MIA for awhile and my posts have been growing farther and farther apart.  I truly do enjoy creating delicious recpies but at the same time......I have a family to take care of.

I homeschool my kids and lately I have been spending more and more time helping them understand their school work.  Now, I know you are probaby thinking I am saying this with some level of 'I wish I didn't have to do that' but the reality is....I really do enjoy it!!

Spending  quality time with your children, learning together, laughing and enjoying a quick snack while learning pre-algebra brings a lot of joy!  Building strong family relationships and learning with your children is priceless!

So while I completely enjoy working on  my blog, editing pictures, creating recipes and responding to comments when it seems I am 'slacking' a bit it is because my little family must come first.

Fluffy Gluten Free Vegan Buttermilk Biscuits

These are the most delectable, light, fluffy gluten free & vegan buttermilk biscuits you will ever try!  They have a very light, melt in your mouth texture and make an amazing companion for your favorite dinner!  If you are sick and tired of crumbly gluten free breads you will LOVE these biscuits!  They hold together perfectly and are extremely soft in texture!

The dough holds together well and is very easy to work with!   This gluten free, vegan buttermilk biscuit recipe is the easiest gluten free quick bread recipe I have ever made.    My family LOVED these biscuits!  My husband who is not gluten free really enjoyed these as well and he is an absolute bread LOVER, he is extremely picky about the texture of his bread. 

I have to admit these are not low fat and do contain Earth Balance however, in baking gluten free breads you absolutely MUST use a fat or the bread will be hard and crumbly.  I tried to minimize the amount of oil in this recipe to obtain the desired soft texture without using too much.

If you are tired of rubbery bread you can certainly use these biscuits for sandwiches or for your veggie burgers.  The gluten free vegan biscuits are very versatile, enjoy!

I have been so busy lately I have not had a lot of time to get the newsletter out or to create recipes in the kitchen.  I am hoping that life will settle down a bit and allow me to get back into the kitchen.   I still have a couple recipes waiting for the blog. 

Gluten free, vegan black bean ravioli I really want to get a better picture of the plain ravioli so you can see how absolutely beautiful it is!

I really want to dedicate some time to emphasizing the imporance of fermented foods.  I know that has been a very popular subject in the natural health world lately, however, most fermented recipes are NOT vegan!  I personally believe that dairy based fermented foods may be better than their regular counterpart, however, I do not believe that any milk whether human or cow is good for weaned children or adults!  There are natural growth hormones in milk, including human milk, that are designed to promote the rapid growth of the infant and these hormones are NOT good for us!

With that in mind, I plan to continue expanding my fermented food recipes so you can include them in your daily diet.   Hopefully I will be able to put together an entire fermented food class very soon so you can learn everything you need to know about making dairy free kefir, water kefir, dairy free yogurt, sauerkraut, kim chee, rejuvelac, cheeses and much more!  Okay on to today's recipe........

Gluten Free, Vegan Buttermilk Biscuits






Makes 12 biscuits









**DO NOT ROLL WITH ROLLING PIN!

Press dough into a circle with hands until 1/2" thick and cut with glass cup or biscuit cutter. Place in a round cake pan or baking pan. Bake 400 for 12 minutes.

Light buttery vegan crescent rolls for your Thanksgiving feast.  These crescent rolls are so light and taste like the rolls you buy from  your favorite bakery, yet they are simple to prepare.  Your Thanksgiving guests will think you spent a lot of time in the kitchen, or a lot of money for the best bakery crescents, it'll be our little secret!  
This is a family favorite recipe!  Whenever we have a large family gathering this is our go to dinner roll recipe!   I hope you enjoy them as much as we do.

The Thanksgiving blog fest is well underway and I hope you have enjoyed collecting the amazing recipes for your Thanksgiving feast.  

Unfortunately this year my daughter and I will not be indulging in the delectable crescent rolls, we have both switched to a gluten free diet.  My daughter struggles on holidays, well, to be honest, I do too because I really miss having a light, fluffy, amazing dinner roll or piece of bread.  It can be very difficult, however, for those who can indulge these are everything you want out of a dinner roll.  I will just be drooling at the Thanksgiving table wishing I was indulging too.

Corn Chowder, Vegan Gluten free buttermilk biscuits



Vegan Gluten Free Buttermilk Biscuit Recipe


There are a few tricks with gluten free biscuits that make them light and fluffy.  You really need to use coconut flour, it absorbs a lot of liquid and gives a lot of wonderful light texture to gluten free baked goods.  I have found that when I use coconut flour in gluten free baking I do not usually need to use xanthan gum.  Xanthan gum often causes baked goods to take on a 'gummy' texture that I do not like.  Generally with gluten free baking you either get a crumbly mess to a gummy texture that is undesirable.  Coconut flour solves this problem beautfully.  These delicious vegan gluten free buttermilk biscuits do not contain xanthan gum but they hold together extremely well, they are not crumbly, nor are they gummy.
 

I generally add between 1/4 to 1/3 c. of coconut flour to each gluten free recipe.  You don't need much or it will absorb too much liquid and make the baked goods dry.  If you are making a gluten free recipe substitute about 1/4 to 1/3 c. of any other gluten free flour with coconut flour.

I try to avoid refined oils if at all possible, this can be a daunting task as most baked goods contain a fair amount of refined oil.  Refined oil gives a rich flavor to baked goods.  This recipe is fairly light, but if you want to add Earth balance for the applesauce you can certainly do that and the recipe will turn out very well that way as well.

Gluten free Easter Bunny Buns Doughnut


These gluten free sweet bread twists take quite a bit of preparation but they are really delicious!  I used a combination of leavening agents in this sweet bread twist recipe, due to the lack of gluten yeast often does not raise the bread enough leaving it a little flat.   The baking powder in this recipe gave it exactly what it needed.

This was a special treat for my daughter, she wanted a special recipe to have for Easter so we tested this one.  We spent Sunday afternoon making these and she enjoyed rolling them out and forming them into the little 'bunny twist' shape.  This makes an excellent project for kids!  Involve the family on a  lazy Saturday or Sunday afternoon and make these delicious gluten free Easter bunny buns.


Cover and let them rise again 45 minutes. Bake 375 for 12-15 minutes. Glaze. (We used stevia, maple powder, cinnamon, vanilla, soymilk, 1 tsp. earth balance to make our glaze.)

I decided to create a wonderful meal for St. Patricks Day and I wanted to be able to share it with my readers.  If you  have ever created a recipe you know that they don't always work out the first time around so I had my work cut out for me creating this vegan corned beef recipe.  

The flavor of the vegan corned beef turned out really well, I think you will be very pleased with it.  I chose to make this gluten free because I know it is so hard forvegans to find gluten free meat substitutes.  I personally don't care for meat substitutes but my family enjoys them and I know for those who are new to the vegetarian or vegan lifestyle some familiar flavor or texture can be helpful.  I am in the process of creating more vegan and gluten free meat substitute recipes because I have noticed that this is a very popular question I am asked.

I want to improve the texture of some of the gluten free meat substitute recipes I have created so far.  I will be posting the recipes for the gluten free meat substitute recipes as they are created and perfected so if you would like the recipes please click to follow this blog and you will be updated as they become available.

The vegan corned beef recipe is a little tricky and it does need some time to cool down and firm up but it has a wonderful flavor.

I had no idea how this gluten free cornbread recipe would turn out, it was a complete test recipe.  When I poured the cornbread batter into the pan I really didn't think it was going to qualify for the blog, but much to my surprise this delicious little cornbread came out of the oven and was delicious!!   This gluten free cornbread recipe is very simple, low fat, lower in sugar than most cornbread and very good for you.

This is comfort soup at its best!  This soup is packed with nutrients and tastes amazing!!!  I was at a loss for what to make for dinner one night and was trying to figure out how to use my fresh rosemary.  I had already made a few Italian dishes so I wanted to create something different.  I was brushing my hair and it came to me, rosemary and potato soup....YUM!

This potato soup recipe is very simple, quick, easy and yet so delicious.  The best recipes are those that delight the tastebuds but take very little to prepare.  The mix of rosemary, garlic and the subtle hint of sweetness from the carrot juice really make this creamy soup pop.  I hope you enjoy the creamy rosemary garlic potato soup recipe.



Gluten Free Chocolate Chip Cookie Recipe Tips


I have been working on gluten free chocolate chip cookie recipes along with low sugar and sugar free cookie recipes as well.  I found a few AMAZING tricks to making a delicious gluten free cookie that I want to share with you.  The gluten free cookies you see in the photo above are low sugar cookies but they are absolutely decadent.  I have also found the tricks to decreasing sugar content in dessert recipes without compromising texture or flavor.

Gluten free baking takes a little getting used to but once I got the hang of it I have had a lot of fun playing around with different gluten free flours, our favorite go to dessert is chocolate chip cookies so creating a delicious gluten free chocolate chip cookie recipe was an absolute MUST in my house. 

The most exciting thing for me is to have my kids BEG me for these low sugar gluten free chocolate chip cookies, they truly LOVE them, even more than the sugar filled cookies they are served other places.  For parents who want to serve their children healthy low sugar desserts stay tuned because I have some great dessert recipes coming. 

My #1 gluten free baking tip:  Use coconut flour!

Coconut flour absorbs A LOT of liquid and acts similar to eggs in vegan recipes so this is a must have for vegan gluten free baking.  I put about 1/4 c. of coconut flour in all my gluten free cookie recipes.  You don't need a lot because it does absorb a lot of liquid, but just a little coconut flour really helps gluten free cookie recipes have the little extra something they need.

#1 low sugar cookie recipe trick:  Use ripe banana and applesauce in all low sugar dessert recipes.  I mix the banana and applesauce together until creamed in the mixer.  Then I add about 1 Tb. of stevia and a couple Tb. of maple syrup.  The combination of sweeteners seems to really do the trick.

It is important to remember that low sugar cookie or dessert recipes will NOT be as sweet as full sugar varieties!  They will be delicious but obviously not as sugar headache inducing.  I prefer the subtle sugar taste to the sickeningly sweet flavor of most dessert recipes.  I have served low sugar cookies to die hard sugar fans and have had excellent reviews so it is definiately doable.

The gluten free, low sugar chocolate chip cookies you see above contain:

bob's red mill flour
brown rice flour
coconut flour
banana
applesauce
vanilla
1 Tb. coconut oil
peanut butter
salt, baking soda and chocolate chips

I did not measure the ingredients :-D  It is just one of those things I do sometimes, but once I get the recipe down I will publish one.....stay tuned you WILL want this gluten free chocolate chip cookie recipe whether you are gluten free or not.

Gluten Free Drop Biscuits


The biggest challenge in creating a gluten free biscuit is to make it light and fluffy and not crumbly.  I have an even greater challenge making whole grain, vegan and low fat gluten free biscuit recipes.  I have found that you do not have to add a lot of refined oils in order to produce a light and delicious gluten free biscuit recipe, you just have to know how to substitute ingredients that will provide the moisture you need.

I was not sure how this gluten free biscuit recipe was going to turn out, a couple ingredients are outside the norm for a biscuit recipe.  I was thrilled with the result, these gluten free biscuits were gone quickly.  My children ate these gluten free biscuits until they were gone!   The trick in this recipe is the soymilk, vinegar and cooked quinoa combination.  The soymilk and vinegar mixture makes a dairy free buttermilk and provides a good rise to the gluten free biscuit recipe, the quinoa provides moisture in place of refined oil in the recipe.



The biggest accomplishment with this biscuit recipe, they were NOT crumbly at all!!  Enjoy this decadent, light, moist and delicious gluten free biscuits!!

This dairy free sour cream recipe can also easily be made soy free by using cashews instead of silken tofu.  This is a very versatile dairy free sour cream and can be used in any recipe calling for sour cream.  If you use the recipe in a sweet recipe for breads or other dessert recipes leave out the garlic powder.



Gluten Free Eggplant or Sunburger Parmesan



This was a delicious recipe!!
I cooked it in a little coconut oil to form a crust and then baked with marinara sauce and my signature white bean mozzarella cheese.  Delicious!!! 
I highly recommend using the sunburger for this one, the eggplant needs to be marinated before use.



Gluten Free Tortilla Recipe

This is an absolute MUST TRY recipe for those on a gluten free diet!!!  They do not crumble, the dough is very easy to work with and I flipped them with my hand, so easy and delicious!

Oooooooo, Amazing!!!  My husband RAVED about this for an hour!  It is so delicious and much healthier than fast food shakes. 
 
I used my vanilla ice cream recipe, you can find that on my blog a few posts back I put it in a blender and added:
 
1 c. frozen strawberries
2 tsp. vanilla
silk almond milk as it blended until it was thick and creamy!

It has been a long time since I have attempted gluten free baking.  The recipe was created for my daughter on her birthday, she requested muffins and I created this delectable muffin recipe.  I let my husband taste them and he liked them, then I told him they were gluten free and he was shocked!  He generally hates anything gluten free and has impeccable taste for food so that was a high compliment.  I hope you enjoy these muffins as much as we did.

****Very Important:  If you attempt these muffins DO NOT buy buckwheat flour at ANY store!!!  They will not turn out.   Buckwheat flour in stores is ground from buckwheat with the hull left on and it gives a horrible chalky flavor to baked goods and is too heavy and produces terrible results in baking.

YOU MUST grind your own from buckwheat groats, the groats should be brown not black!!!

I know what you are asking, WHERE did the omega 3's come from, there is no flax seed or fish or walnuts in this stew? 

Guess what, those are not the only foods that contain omega 3's..........WHAT????

Yep, that's right.  Green leafy vegetables are excellent sources of omega 3 fats, even bananas have omega 3's.  Most plant foods contain small amounts of omega 3's so if you are eating a healthy whole food plant based diet, you can get enough without flax or any other food touted to contain 3's.

I would also like to point out that you can get nearly 25-50% of your daily value of most nutrients in one little serving of stew!  That is powerful nutrition!

Simple Quick Low Fat Cornbread



Okay, I admit this is not going to be the most moist cornbread recipe.  I have an excellent moist decadent cornbread recipe for the cookbook, however this one makes up in 2 minutes, bakes for 12 minutes and is still delicious.

I needed something quick and easy to go with the southern stew and cornbread seemed perfect.  However I wanted a low sugar, oil free recipe perfect for weight loss and diabetics!

The First Re-creation of an All American Favorite...Pizza Recipe!

This was a HUGE hit with my family. I made a beautiful Deep Dish Whole Wheat Crust for the pizza! It takes a little bit of planning but WOW, it is SO worth it. This is what the pizza looked like a gourmet restaurant pizza.

Here is the pizza all cooked with my all purpose cheese sauce on top! YUMMY.






This pizza has onion, bell pepper, mushrooms, broccoli, and sunburgers as toppings. Then I made my cheese sauce to put on top and popped it in the oven for 30 minutes. The crust turned out fabulous, it was soft and very thick. I prefer deep dish pizza so if you like thin crispy crust this would not be the recipe for you.


The cheese sauce on the pizza can be used for just about anything. My family likes it over steamed veggies, sandwiches, you name it! The best part about the cheese sauce: It is made from vegetables!! It is delicious and tastes good on pasta too.

New Years Resolutions!

New Years Resolutions!
After the holiday binging and candy making I decided to start the new year off with healthy, low fat recipes. I create a lot of fun recipes but in my own life I actually adhere to a more low fat, whole foods diet.

I try to create recipes that will appeal to a wide variety of people at various stages of healthy vegan eating. But over the next couple of months I'd like to focus more on whole foods and oil free cooking so hopefully I'll have a lot of fun food for you.

Quinoa Enchilada Casserole


Oooooo this was GOOD! This recipe contains, low fat baked tortilla chips, quinoa, kidney beans, corn, salsa, spices and a fat free cheezy sauce on top! My family LOVED this recipe, it is very mild and kid friendly, but for those spice lovers you easily could add some heat to this one.


Vanilla Coffee Cake Strussel Muffins (oil free, low fat)


My husband LOVED these muffins, he is my sweet tooth tester. These muffins contain absolutely NO added refined fat. They are made with a combination of turbinado and liquid sweetener to give a delicious soft interior and crisp exterior. The topping contains no oil, it has oats, maple syrup and pecans that make up the bulk of the recipe for the topping. Icing is silken tofu, soymilk, turbinado and vanilla.

****My husband claimed these tasted like his favorite cinnamon rolls from the Mall, Yeah they are THAT GOOD!!!

Nearly Fat Free Chocolate Chip Cookies!!!


Cookies are extremely difficult to make without oil or some sort of fat, but these cookies are amazing.

My husband LOVES chocolate chip cookies, he is very picky about his chocolate chip cookies and he has never been a fan of my low fat versions, until this recipe!!

This was actually an accident, I used the recipe from the muffins and created this recipe and oh my is it fantastic!! They even have a little bit of a crunch like full fat cookies!!! Truly amazing!!!


They dark tint comes from the whole wheat flour, turbinado sugar, and maple syrup.
