Fall Harvest Begins with a beautiful tomato basil soup full of garden fresh vegetables in a rich tomato sauce infused with italian seasoning and basil.  Last week we had a beautiful crisp cool evening that inspired me to create a delicious, warm fall soup utilizing the beautiful harvest from the summer garden.

This soup is so easy to make and it is a guaranteed crowd-pleaser!  It is a very warming fall soup and yet it is still light enough for warmer evenings as well.  I think it makes the perfect soup for the changing weather.  This is the type of recipe I turn to when I do not have time or I do not feel like spending hours in the kitchen slaving over a hot stove to make dinner.  If you are one who wants to throw it all in pot, stir it up and serve it.....this is YOUR recipe!

Vegan Enchilada Recipe

Amazing Vegan Enchilada Recipe






Delicious vegan enchiladas filled with lentil and rice crumbles flavored with enchilada seasonings and tofu sour cream.  Rolled up in soft sprouted wheat or brown rice tortillas topped with homemade enchilada sauce, rich homemade cheese, sour cream and guacamole.

This delicious recipe can easily be made gluten free by using ezekiel brown rice tortillas or homemade gluten free tortillas.    I created this enchilada recipe to serve my parents and family when they came to visit.  Everyone raved over the enchiladas!  They are very simple to make but have a delicious restaraunt quality flavor.

As I was making this recipe I noticed I did not have one drop of lemon juice in the house!  Lemon juice is a key ingredient in tofu or cashew sour cream.  The filling was made, the tortillas were purchased and laying out so there was no turning back.  I stood there staring into the fridge thinking what can I do to fix this.  I saw the lime juice and thought well it's the next best thing so I'll give it a try.  The sour cream turned out AMAZING!

*** Note: If you don't have lemon juice, lime juice works amazing in the sour cream too!

Grilled Vegetable and Almond Herbed Cream Cheese Panini Recipe



I created a delicious herbed almond and cashew cream cheese to make a rich spread for this delicious Italian style grilled vegetable panini.  The vegetables are marinated in a delicious, oil-free Italian dressing for a short time and then grilled in this delicious sandwich.

I created this recipe one night when I could not decide what to make for dinner, it was a hot and muggy evening and I simply did not feel like a heavy dinner.  This little gem of a recipe was created out of my need for a quick, simple, light summer dinner!

My kids are DIE-HARD peanut butter and jam sandwich lovers and therefore they were the ones I worried may not be to thrilled with my new creation.  My daughter is a picky eater, sure she'll eat spinach out of the garden but she has her own style of being picky.

I had a need to use the vegetables from the garden, every year the whining starts about this time because my family gets sick of eating zucchini in everything!  Well......this time I got them all to eat the zucchini and beg for more!  Hurray!  I call that  a success.

This recipe can be either gluten free or made with regular whole wheat bread.   The photo is of whole wheat bread, my daughter and I used brown rice tortillas and grilled it like a vegetable quesadilla and it was fabulous!!

Vegan Gluten Free Ice Cream Sandwiches

These vegan ice cream sandwiches are were a HUGE hit with my family.  The best part about these ice cream sandwiches is you DO NOT need an ice cream maker.  A good blender or food processor will make this delicious ice cream and then you just spoon it in between these amazing gluten free chocolate chip cookies.

I am not responsible for any weight gain that occurs from making these ice cream sandwiches because I can guarantee you will eat too many.  I unfortunately did.


Oil Free, Low Fat Vegan Chocolate Chip Cookie Recipe


Absolutely amazing!!  These are perfect for ice cream sandwiches or eat them on their own.

**This can be made with whole wheat pastry flour for those who are not gluten free.


You can add more soymilk if needed but do so slowly, if you add too much you will get runny ice cream.

Delicious Healthy Donut Recipe

Mouthwatering Healthy Donuts

I wasn't sure what to expect when I tested the first donut but much to my surprise it was very moist, light, soft and delicious!  These donuts are much more delicate and soft than the cake donuts you buy at the store, they are almost melt in your mouth soft and yet the perfect texture.

This was a recipe my daughter has been BEGGING me to make.  She has been craving gluten free donuts.  I have tested a few recipes with so-so results and then finally...... WOW!!!   These donuts are AMAZING!  I purchased a donut pan just for this recipe and luckily, it was worth it.  I certainly was not going to make fried donuts so baking was the only option and without a donut pan you have to make dough which is too thick and the donuts come out heavy.  With a donut pan you make a batter to pour in and the donuts come out heavenly.

Most vegan donut recipes are a little heavier than I like but this vegan donut recipe is absolutely light and fluffy.  I like my donuts to be very light and moist and this recipe certainly delivers on that point.  I hope you enjoy them as much as we did.

Vegetable Soba Stir Fry Recipe


Delicious stir fry featuring a variety of fresh veggies tossed in a Sesame sauce with a hint of heat.  My family cannot handle heat at all!  They cannot stand spicy, not even garlic so I unfortunately have to really tone down the Mexican and spicy Asian food.  My family LOVED this dish because I made it very mild, however, you can certainly turn up the heat by adding more red pepper sauce.

It is very versatile so you can adjust it based on your own taste, you can skip the mushrooms and add tempeh, tofu, sunburgers or you can switch up the veggies and use cauliflower or broccoli, whatever you have on hand.  You certainly are not limited to the veggies I have used,  you can use whatever veggies you like.

This is one of those recipes that is simple, easy, and FAST!!  I've noticed a lot of women are looking for cheap easy meals and this certainly fits the bill.  The best part about this recipe though is that it tastes like something you just picked up from a Chinese restaurant on the way home!

My daughter was BEGGING for this last night for dinner and I couldn't remember when I made it so I couldn't find the recipe.  She will be thrilled to know that while digging through last months creations I FOUND IT!  You can bet this is what we will be having for dinner tonight!

***Note the recipe calls for soba noodles, however, to make it a gluten free noodle stir fry we used rice noodles instead.
